NACE EXPERIENCE! 2009
The most informative session I have ever attended at a NACE conference.

After several wonderful years of attending the NACE educational conference, I have many, many learning experiences and memories.  Many of them come from my counterparts from around the country who are there to share ideas for the moment and/or for years to come. Many are the wonderful presentations of breakfast, theme breaks, cool reception décor and gala dinner events. 
 
However, this year I very much enjoyed all the breakout sessions I attended … and in particular, the most informative session that I can recall ever attending at any NACE conference. 
 
The title and promotional write-up for this remarkable session was:
Reaching Today’s Wired Bride (for free)
Sonny Ganguly, WeddingWire
Sonny will discuss how to effectively build brand equity in today’s marketplace, one that tends to be crowded and cluttered. The presentation will share best practices from Wal-Mart, Kraft foods, Harvard Business School and WeddingWire.
 
While I enjoyed the update on bridal decisions made using the on-line searches, I was really impressed with the information on the following websites. Many might just change your life or certainly the way you do things. Check out the following and a brief description of how they will help you:

My personal favorite website was www.animoto.com!   I opened a free account and uploaded 12 photos from NACE Experience 2009, selected music from the offerings and, presto, I had a video. 
  
Lastly, “Save the date.” Next July 25th-28th, NACE Experience! 2010 in Austin, Texas.

Experience 2009! Conference

            My second conference experience, was as expected, a very exciting experience for me. Our first official day of conference was dedicated to the CPC meeting which is the Chapter Presidents Council. These are present or former chapter presidents who have decided to continue to serve on a national level. During this meeting we head all of the great things national is doing to support us on the chapter level, as well as hear about their plans for the coming year. At the CPC luncheon I was honored with the President's list award, which is only given to one member of the chapter per year. From sessions on Food Allergies, Blogging to Wine Trends, and Cost Effective Menu creation, it was a highly educational conference. The sendoff was a fantastic session by Janine Driver, whose book is called “The Lion Tamer”. Janine in the matter of 30 minutes had us rethink the body language and communication styles we use, as well as encouraged us to “Break our Chain” which is a euphemism for breaking free from whatever is keeping us from being truly successful. Finally the Awards Gala was very exciting for all of in the Las Vegas chapter because our members had a very good overall showing. I am already looking forward to next year's conference in Austin to see what exciting sessions and events NACE can produce for us attending.

Experience 2009!

One of the elements I found to be the most interesting at the 2009 Experience Conference was the design session.  While this session is held annually, there was a new "twist" this year.

The session was put on by Stephanie Bradshaw, a member of the Baltimore Chapter of NACE, and an up and coming designer.  Prior to the event, Ms. Bradshaw got to personally know the four individuals/couples that she was designing an event for.  While that is not unusual, what I did find unique is that Stephanie took the overall planning a step further.  In addition to designing the event, she designed their personal outfit for the evening as well.  Ms. Bradshaw has found that some clients do not have the knowledge or foresight when planning their attire to ensure their maximum comfort, confidence and enjoyment.  

While as local catering and event planners we may not all be able to do that, it was an interesting aspect to the overall event that I had not thought about previously.

Wendy’s Take on Experience 2009 – Charlotte, NC
 
Experience is a great name for the NACE National Educational event. It truly was a great experience.
 
While the décor and food is always something that I can’t wait to taste and take in, the highlight of the week for me were the classes I went to.
 
I thought I would share a few of the things that hit home for me in two of six classes I attended. So here goes:
 
How to be Socially Savvy in All Situations, taught by Joy Weaver –
§         85% of our success is due to our social skills
§         75% of our stress does not come from work, but who we work with
§         We spent a lot of time on how to shake hands appropriately, wear our nametags, etc.
§         Interesting fact, your left hand is your “personal hand” and should be used to cover a cough, sneeze, etc. And, you right hand is your social hand and is used to shake hands, etc.
 
The Profit Focused-Chef, taught by Jerry Edwards, CPCE
§         Question was asked as to who was most important in the list of three people:
1.       Customer
2.       Staff
3.       Company
§         The answer was interesting: 1.Company; 2.Staff; 3.Customer, and here is why -
§         If your Company is on track (profitable) and your Staff is happy, your Customers are going to be taken care of
§         There were so many points in this class to pass on, but the thing that I most enjoyed in this learning was the different types of Hors d’ oeuvres & Entrees that you can serve at a lower food cost and still make a decent profit. This is something that I can use everyday in my job.
 
The general sessions, receptions, dinners were all a treat to see and taste:
 
We experienced regional items like:
§         Fried Green Tomatoes, Shrimp & Grits and Home-Made Biscuits
§         And, we enjoyed tastes from Morocco like: Grilled Moroccan Spiced Beef Skewers, Moroccan Rice Pudding & a Selection of Exotic Beverages
 
All in all it was a great week; I learned a lot and look forward to going to Austin next year.

Request for Proposal – NACE Las Vegas Chapter
 
About the event:
The Las Vegas Chapter of the National Association of Catering Executives (NACE) desires to host a four hour evening fundraising reception on Wednesday, March 10, 2010, from 8:00pm until 11:59pm (timing is subject to change slightly). The reception guests will be attendees from the 2010 Catersource conference being held at Paris Las Vegas Hotel. This is a first time event that has potential to be an annual event.
These attendees are off-premise catering companies, restaurant owners/chefs, private club and banquet facilities, hotel catering management, and institutional catering/chef personnel and culinary teams from around the US and internationally. Venues accommodating 400 to 1500 will be considered. Attendee count is not known, but is expected to fall somewhere within that range. A limit on number of tickets
available will be established in accordance with venue capacity.
 
What we are looking for:
A host venue with exceptional culinary offerings, including libations and theme event proposals, is needed. Ideally, this reception would be equipped with food and beverage stations, interactive group activities and have a learning component for the attendee demographic as described above. There should be sufficient food and beverage quantities to avoid running out, and there should be sufficient serving stations and bars to avoid long lines. Some seating, both highboys with or without stools and low cocktail tables with chairs, should be provided. We will accept bids with just food and beverage or with all entertainment, décor and other activities included.
 
Budget:
Our ultimate goal is to send ten NACE Las Vegas Chapter members on full scholarship to the “NACE Experience! 2010” educational conference in Austin, Texas. Additional funds will support our annual charity giving for 2010 and assist NACE’s national office with its education and marketing initiatives for NACE and our Foundation. We are looking for inclusive pricing for heavy hors d’oeuvres, action stations and proposer’s choice of a four-hour bar/beverage event. If venue is not within walking distance of Bally’s, we will have slightly less for the food, beverage and entertainment of the event in order to provide free transportation shuttles for attendees. Venue selection will not be based on cost alone, but cost will be considered in the decision-making process.
 
Concessions offered by NACE to the host venue shall include:
Event marketing by Catersource publication (circulation 25,000+ nationwide), brochures and programs.
Location featured on national NACE (membership 4000) website with a distribution database of 10,000 industry professionals. Local event promotion by the Las Vegas Chapter of NACE
One (1) full scholarship to “NACE Experience! 2010” in Austin, Texas, from July 24 through July 27, 2010. A full scholarship includes conference registration (most meals included), four nights lodging at the conference-headquartered hotel and airfare.
 
Concessions offered by the host venue to NACE shall include:
NACE Las Vegas Chapter retains the right to review and recommend menu selections, theme and any other reception components for appropriateness.
NACE Las Vegas Chapter retains the right to review suppliers and subcontractors for acceptability.
 
Concessions offered by the Host Venue to the Las Vegas chapter of NACE:
Complimentary menu tasting at least 45 days prior to event
Three (3) pre-planning meetings (without food & beverage) at host venue
Prefer a set up of event at least one-day prior at no additional charge
Additional concessions as offered by the host venue
 
Donations:
NACE Las Vegas Chapter will have the option of gathering sponsors for this event. These sponsors will need to be identified and featured throughout the event. This would include signage for sponsors and may include donations of food and beverage (but not to directly compete with food and beverage offerings of the host venue). Menu planning by the host venue would need to take these items into account, and additional serving stations for these items may need to be provided by the host venue.
 
Rules and regulations:
Proposer must be a NACE Las Vegas Chapter member in good standing, a new member at time of proposal submission or a non-member who agrees, if selected, to join NACE (national and the Las Vegas Chapter) within 30 days of selection. It is further requested that any subcontractors used be NACE members whenever possible.
 
Our objectives:
The Las Vegas Chapter of NACE intends to produce a fun and entertaining dining/networking event for Catersource attendees to enjoy while they are visiting our community, while at the same time (1) raising funds for Chapter member enrichment through educational conference attendance and (2) enhancing the Chapter’s ability to participate in other creative and philanthropic pursuits at both the local and national
levels.
 
In keeping with the cutting edge image of NACE, it is critically important that the food and beverage offerings be of high quality, innovative and uniquely presented. We are showcasing not only the host venue, but the organization itself while providing an interesting, educational and wow factor to the
attendees of this event.
